Taco Seasoning

You can make tasty tacos with many combinations of protein and veggies, but a new favourite for us is minced Cochrane Creek pork, with a vinegar slaw. We are trying to be more salt conscious, and packaged taco seasoning has a lot of salt content. So here is a simple home made taco seasoning to keep on hand.

  • 1 cup minced dried onion
  • 1/2 cup chilli powder
  • 1/3 cup of garlic powder
  • 1/4 cup cumin
  • 3 T oregano
  • dried minced hot peppers, to your taste

Mix ingredients together and store in a sealed container.

Brown your minced pork, ground beef, chicken, or whatever. Stir in about 2 tablespoons of seasoning mix per pound of protein. Add 2 tablespoons of tomato paste and 1/3 cup of water, stir and simmer until saucy ( 3 minutes maybe?) salt and pepper to your taste. Serve on tortilla wrappers with cabbage slaw, shredded lettuce, diced tomato, and whatever fixings you prefer.

If you want to make your own tortillas, or are looking for a breakfast taco recipe to use up your Cochrane Creek eggs before the next delivery, there is none better than the Robert Rodriguez Sin City Breakfast Taco recipe.
