You can make tasty tacos with many combinations of protein and veggies, but a new favourite for us is minced Cochrane Creek pork, with a vinegar slaw. We are trying to be more salt conscious, and packaged taco seasoning has a lot of salt content. So here is a simple home made taco seasoning to keep on hand.
- 1 cup minced dried onion
- 1/2 cup chilli powder
- 1/3 cup of garlic powder
- 1/4 cup cumin
- 3 T oregano
- dried minced hot peppers, to your taste
Mix ingredients together and store in a sealed container.
Brown your minced pork, ground beef, chicken, or whatever. Stir in about 2 tablespoons of seasoning mix per pound of protein. Add 2 tablespoons of tomato paste and 1/3 cup of water, stir and simmer until saucy ( 3 minutes maybe?) salt and pepper to your taste. Serve on tortilla wrappers with cabbage slaw, shredded lettuce, diced tomato, and whatever fixings you prefer.
